Kapila joined the culinary team at Mercure Maldives Kooddoo in 2017. He’s worked at leading hotels all over the Maldives for over 25 years.
“For as long as I can remember, I’ve had a passion for cooking. As a chef, I believe that the better you get, the greater the challenges you seek. My team and I spend months developing and refining a dish, until we feel we’ve taken our cooking to a new level.
I find inspiration in the organic vegetables, herbs and spices that grow right here on the island in our Chef’s Garden. I especially love the local chilis, which give dishes a distinctive flavour. My favourite dish is traditional Maldivian roasted fish, fihunu mas, served with roshi, the local flatbread.
I believe it’s important to have a clear concept of what a restaurant means to a resort. At Mercure Maldives, our aim is offer our guests a 5-star dining experience at a 4-star resort. When they appreciate our food, it gives me a fresh shot of energy every day.”
